We would be hard pressed to find a restaurateur that has as many Long Island wines on their restaurant wine lists as Chef Tom Schaudel. Not to mention, to find such a celebrated chef and restaurateur with as much passion about Long Island wines. You see, Tom has been quite the advocate for our local wine region. Most recently, we dubbed him Long Island wines biggest cheerleader. Unlock your inner sushi chef…and don’t worry if you don’t like fish, it’s all about the rice and roll.
First learn how the rice is selected and prepared, from rinsing the raw grains to perfectly seasoning the fluffy cooked final product.
Get a little knife skills lesson so nobody hurts themselves. Then choose your ingredients to prepare from the variety of fish and vegetables the chef has selected for the day.
The chef will demonstrate techniques for your rolls-a traditional maki roll and an inside-out roll, then guide you through making your own.
Class will also include discussions on the sourcing quality fish, accompaniments such as wasabi, ginger, soy, unagi sauce and spicy mayo. Proper slicing and serving techniques of course, as well as use of specialty equipment like the bamboo mat. We’ll even cover the use of chopsticks. No forks, but fingers are ok!

Chinese Dumplings - Steamed & Fried

In China, "dumpling" means wealth. It is said that eating them aligns you with a prosperous life.
We'll demonstrate how to make the simple dough featuring rice flour, wheat flour, and water.
You'll make the pork and vegetable filling, then fill, seal, and steam in a traditional wok bamboo steamer. You can also create potstickers by pan frying one side of your dumplings.
You'll learn multiple styles of pinching your dumplings, or you can use the provided hand press. Lastly, you’ll make a tangy, salty and sweet dipping sauce (with more than enough to take home, too).
